Buffalo Kebabs - makes 3, 2 oz servings

Set oven to 375F.

3 wooden skewers, soaked in water before you start, for at least 20 minutes, so they don't burn.

6 oz ground buffalo OR  ground lamb OR ground beef

1 clove garlic, finely chopped or grated

1/4 cup red onion, finely chopped or grated

1/4 tsp chili flakes

1/4 tsp fresh ground black pepper

1/2 tsp salt

1 tsp dried mixed herbs of your choice. Rosemary, thyme, parsley, etc your choice. Use fresh if you have it.

1/4 tsp ground cinnamon

1/2 tsp ground cumin

3 medium crimini mushrooms cut in half or any vegetable that you prefer

6 kalamata olives, pitted OR another vegetable of your choice

1 tsp of olive oil to brush kebabs

Mix all ingredients except oil, mushrooms, olives & extra onions, together in a bowl. I always mix everything thing together and pop it back in the fridge to cook later on.

Evenly divide mixture into 6. Mold 2 pieces of buffalo mixture around soaked skewers. Add vegetables in any order that you choose.

I had extra onions, so I just threw them in the pan.

Place pan on top rack of oven. Cook for 15 minutes. Turn kebabs, cook for another 10 minutes.

Well done will be around 160F. Watch your cooking times as ovens/grills will vary. I find a lot of game meats turn out better if they are slightly underdone. You'll have to test this out to see what you like best. Enjoy!
