I had 1 ear of corn left and I didn't want it boiled or wasted. I had a few minutes so this is what I came up with. Super quick & easy. Have it as a side, a topping or a by itself (yep, it's that good!) .

Corn Salsa/Relish 2-4 servings

1 ear  peaches & cream corn, roasted, cooled and taken off cob

1 small red onion, diced

1 small tomato, seeded & diced

1/2 lime, juiced. Lime juice is used, only.

1/4 tsp chili flakes

1/4 tsp fresh black pepper

1/4 tsp salt

6  fresh basil leaves, julienned

1 tsp fresh oregano, rough chopped

Mix all ingredients together. Let sit, covered in fridge for at least 3-4 hours to let the flavours develop. Enjoy!

Nutritional information, per 1/4 cup (approximate): 29 calories; .3  g fat; 136 mg sodium; 6.9 carbs; 1.2 g fibre; 2.1  g sugar; .9 g protein

Just a couple of ways I used the Corn Salsa/Relish.
