Recipe: Leftovers can make a simple tasty thing

I had 1 ear of corn left and I didn't want it boiled or wasted. I had a few minutes so this is what I came up with. Super quick & easy. Have it as a side, a topping or a by itself (yep, it's that good!) .

Corn Salsa/Relish 2-4 servings

1 ear  peaches & cream corn, roasted, cooled and taken off cob

1 small red onion, diced

1 small tomato, seeded & diced

1/2 lime, juiced. Lime juice is used, only.

1/4 tsp chili flakes

1/4 tsp fresh black pepper

1/4 tsp salt

6  fresh basil leaves, julienned

1 tsp fresh oregano, rough chopped

Mix all ingredients together. Let sit, covered in fridge for at least 3-4 hours to let the flavours develop. Enjoy!

Corn Salsa/Relish

Just a couple of ways I used the Corn Salsa/Relish.

Try it this weekend. It's light & refreshing. Are there any quick recipes, that taste really good, that you like to put together?

Enjoy the long weekend (Civic Holiday in some parts of Canada.)!

Till next time,

Nadia

  1. We made a salsa like that recently, but we couldn't figure out how to eat it except on chips. I love that you used some examples on how to eat it. I'm going to have to try it on a burger the next time we make it.

I'm glad that you found the examples useful. I also thought about the corn salsa on a taco, burrito or any kind of wrap. That would be good as well. Thanks for stopping by!

I love your food ideas and recipies. You should start doing tutorials on youtube on some of your creations.

Thank you! I'm glad that someone is enjoying them & getting use out of them!
As for the tutorials, I've thought about that, it's just a matter of having a good video recorder. Which I don't have right now.
