~St. Patrick's Day is coming up on Thursday and I will be painting my nails green. It's once a year. No biggie. I'm sure Irish people probably think us Canadians & Americans ( & others) are weird (maybe/maybe not) with the way we celebrate the day, but hey it gets us through a dark March. By the way, if you're drinking on St. Patrick's Day, please make travel arrangements ahead of time. Do not drink/drug and drive. No one wants to get a phone call, that you are dead, or that you killed someone. PSA over.
~I will be making my first proper corned beef (not the canned stuff), with cabbage & potatoes on the side. I will also be making soda bread for the first time in years. Growing up my mom always made a St. Patrick's Day dinner, so I'm feeling like I want to recreate it. I'll let you know how it goes.
~I'm waiting on some goats milk powder, because I'm going to DIY my own coffee creamer. I'm attempting to get rid of, one of the worst things in my pantry/diet. Commercial coffee creamer, powdered. I'm choosing goats milk powder because they do not make, lactose free cow's milk powder. I've tried the soy/nut liquid creamers and I do not like the taste or consistency. I have one cup of coffee (95% of the time) so I must enjoy it and not grimace my way through it. So here's to hoping my DIY is successful. By the way, trying to find goats milk powder in the lower mainland is impossible. I know I can't be the only person who can't digest cow's milk and is looking for other options. More on that later.
