Today is International Dance Day (this years message). If you're a dancer or know a dancer, they work hard and need good food to fuel their days. This light but powerful protein salad is in honour of dancers everywhere. I know that everyone has different dietary needs, but hopefully this will help when you are stuck for salad ideas! Enjoy & let me know how it turns out!

Simple Vegan Protein Salad

Makes approximately 4 servings

2 cups/serving

Simple Vegan Protein Salad

Ingredients

  • Salad:
  • 2 cups kale, chopped
  • 2 cups baby spinach
  • 2 cups sunflower shoots
  • 1 cup grapes, sliced in half
  • 1 cup grape tomatoes, sliced in half
  • 4 tbsp raw almonds, chopped
  • 4 tbsp raw cashews, chopped
  • 4 tbsp raw sunflower seeds
  • 4 tbsp raw pumpkin seeds
  • Dressing:
  • 4 tbsp balsamic dressing
  • 4 tbsp extra virgin olive oil
  • Generous sprinkling of fresh black pepper (or how ever much you like)
  • dash of salt (optional)

Instructions

  1. Mix your seeds and nuts together. Set aside.
  2. Make sure to wash your fruits and vegetables well before starting.
  3. I strip the tough stalks from my kale and then soak them in bowl, rinse and repeat several times, until all of the dirt is removed.
  4. Soak and rinse the other greens, but be gentle because they will bruise easily.
  5. Slice your grapes and tomatoes in half.
  6. Mix salad dressing ingredients in a jar with a tight lid or whisk by hand, until blended.
  7. Arrange your salad in a bowl or on a platter. Sprinkle the seeds and nuts on top. Drizzle with dressing, serve and enjoy!

Notes

Remember use what you have in your cupboards, if you don't have what I've listed. If you need to restock, check amazon.ca/com. They have great deals on organic seeds, nuts and other dry goods, all of the time. The larger the quantity, the better the deal, in most cases. Or take an afternoon and check out the pricing of the grocers, in your area. It's an afternoon, but once you know who has the best deals, for your bulk items, future shopping will be a breeze and more importantly, quick.
