This a hearty bread with a sweet undertone. Great with a slather of butter, your favourite jam or by itself. Some extra nutrition, that's not given away by the taste. Try it, you'll love it. If you do, I'd love for you to sent me a pic & tell me how you liked it! Watch me make it here.

Healthy Sweet Potato Bread

Prep Time: 10 minutes

1 long, large loaf or 2 smaller loaves or 12 buns

Healthy Sweet Potato Bread

Ingredients

  • 1/2 cup sweet potato mash
  • 2.5 tsp traditional yeast
  • 6 -7 oz water water
  • 1 large egg beaten or flax seed gel. Check the link provided for how to make this.
  • 1 tbsp honey or sugar
  • 1/2 tsp salt
  • 2 tbsp melted coconut oil or melted butter/olive oil/any oil for baking that you prefer
  • 8 oz all-purpose flour
  • 8 oz oat flour
  • 1 tsp brewer's yeast (optional)
  • 3 tbsp ground flax seed

Instructions

  1. Add the yeast & honey to 2/3 of the warm water. Mix and set aside. The yeast needs to start bubbling before it is added to the rest of the ingredients.
  2. Mix flours, brewer's yeast, flax seed & salt. Set aside in a large bowl.
  3. Mix the sweet potato mash, melted coconut oil & egg together set aside.
  4. When the yeast has started to bubble to the top of the water add the sweet potato mash mixture to the flour. Then add the yeast mixture.
  5. Using a wooden spoon or your clean hand, mix until the dough starts to form and hold together. You want it to be slightly sticky. If the dough is too dry before this point add the other 1/3 of the warm water.
  6. You can continue to mix in the large bowl or turn the dough onto a lightly floured surface. Kneading for about 6-10 minutes.
  7. Place the dough in a lightly greased bowl. Let rise in a warm spot, covered, until double in size. About 30-40 minutes.
  8. Shape the dough and place in prepared baking pans. Preheat oven to 350°F/176°.
  9. Let rise, covered, for another 35-ish minutes.
  10. Bake for 30-35 minutes or until done.
  11. You can baste the tops, with butter straight out of the oven. I chose not to.
  12. Leave in pan for 10 minutes. Turn out onto wire rack to cool completely or serve warm.

Notes

The amount of liquid and flour will depend on a few factors.

-Your altitude

-The weather

-The type of flour you use

-How much moisture is in the sweet potato mash

If your climate is dryer, you may need more liquid. If your climate is humid you may need more flour.

Always have extra flour and warm water on hand, when you begin mixing. Don't add all of the liquid at one. Start with about 2/3rds of the water and go from there.

This bread freezes very well for up to 6 months. Cool completely, slice & wrap well before freezing.

My DIY Hand Butter is a great go-to hand conditioner, especially now that the weather is turning cooler. Wind, rain & colder weather can wreak havoc on our skin. Use this butter throughout the day or as part of your nightly routine. This DIY butter works great on feet, as well. Give yourself a quick foot massage & cover your feet with socks, overnight. Sure you could buy this at the store but if you like to save money, this is a great alternative. Plus, you know exactly what is going on & into your skin.

Easy DIY Hand & Feet Butter

Ingredients

  • 1 oz Cocoa Butter
  • 1.5 oz Pure Shea Butter
  • 1.5 oz Organic Virgin Coconut Oil
  • 2 tsp Castor Oil
  • 1 tsp Pure Vitamin-E Oil
  • 6 drops each, Thyme Oil & Tea Tree Oil
  • Large glass measuring cup
  • Kitchen scale
  • Plastic/rubber whisk
  • Plastic/rubber spatula
  • Small portable, sealable container OR
  • Old plastic or glass jar with a pour spout or nozzle of your preference

Instructions

  1. Fill a large pot or bowl with hot water. I used this to melt butters, because I didn't want to overheat the oils or use microwave, to lose any of the good qualities of the oils or butters. This method will take longer but it's once every 6 months or longer.
  2. Place large measuring bowl over hot water.
  3. Simply whisk mixture together, minus the essentials oil, until melted.
  4. Add essential oils.
  5. Pour in jar.
  6. Leave uncovered until completely cool.
  7. Massage a pea size into hands or feet.

Notes

Use what you have at home, or what you can afford in store or online. Try different ratios and types of butters, oils & essential oils.

Just after melting. It will harden and the colour will change, to the picture above. The temperature of your hand will melt the butter again, before use.

Cocoa Butter (100% Pure) by NOW - 7 oz

Shea Butter 100% pure and raw natural - Premium quality moisturizer 1lb / 16oz

Nutiva Organic Extra-Virgin Coconut Oil, 444 ml

Heritage Store Castor Oil, 8-Ounce

Jamieson Laboratories Pure Vitamin-E Oil, 28ml

Holista Tea Tree 100 Percent Pure Oil, 25ml
