If you're cooking for 1 or 2 people, with limited ingredients on hand this is a great tomato sauce. This sauce is great over pasta, or if you want to jazz up some fresh or leftover chicken. If you want to keep it vegan add some rice pasta, firm tofu or a couple cups of your favourite vegetables.

Prep Time: 4 minutes

Cook Time: 23 minutes

Quick Tomato & Mushroom Sauce – Recipe

Serve sauce hot, over your favourite pasta & enjoy!


  • 1 tsp vegetable oil, optional
  • 1.5- 2 cups ripe tomatoes, chopped
  • 1 cup of hot vegetable/chicken/beef stock (You may or may not use all of it)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1.5-2 cups mushrooms, sliced
  • black pepper to your taste
  • 4-5 leaves of fresh basil, chopped


  1. Heat oil in a medium to large pan.
  2. Add tomatoes.
  3. Cook for about 4 minutes. Stirring occasionally.
  4. Add about 1 cup of hot stock. I used beef stock from another dish that I was cooking.
  5. Stir. Cooking for another 4 minutes or so.
  6. Add garlic powder, stirring.
  7. Add onion powder, stirring.
  8. Cooking for another 5 minutes or so.
  9. Add sliced mushrooms.
  10. Stir well. Cook for about 4 minutes.
  11. Add black pepper to your taste. Stir.
  12. You want your tomatoes nice and soft. They should mash easily under the light pressure of your cooking spoon.
  13. Add basil cook for 1 minute & turn off heat.


Most stocks have some salt, that is why I have none listed. If you use water or a sodium free stock, go ahead and add salt to your taste.

You can double or quadruple this recipe to serve more.

Or just use a large can of whole or crushed tomatoes, instead of fresh tomatoes.
