This is a great recipe for those busy evenings, when you want something filling & tasty. This is a great alternative to meatloaf made with beef, with extra vegetables, baked right in. Click here to see the video.

Chicken Meatloaf

Prep Time: 10 minutes

Cook Time: 35 minutes

Chicken Meatloaf

Ingredients

  • 1/2 lb ground chicken/turkey
  • 2 garlic cloves, crushed
  • 1 small onion chopped or grated
  • 1 medium carrot, grated
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup panko or bread crumbs
  • 1/2 -1 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp chili flakes
  • black pepper to taste
  • 1/2 tsp prepared mustard
  • 1 tbsp ketchup

Instructions

  1. Chop/grate all of the vegetables.
  2. Add to ground chicken, in a medium size bowl.
  3. Add all of ingredients, mix until incorporated.
  4. Add to loaf pan or pan of your choice.
  5. Place in preheated oven of 350°F for 25-30 minutes.
  6. Optional: Top with a little ketchup or bbq sauce, broiling for 5 minutes.
  7. Serve hot, with a salad, steamed vegetables, potatoes or rice.
  8. Enjoy!
