Pancakes, Plain & With Blueberries – Recipe

Weekday, weekend, summer or winter. Pancakes are great, any time of the year. Now that summer is in gear, this recipe is a great way to get your kids into the kitchen with an easy recipe the whole family will enjoy! Do you like your pancakes plain or with blueberries? Pancakes, Plain & With Blueberries Recipe


  • 1 cup all-purpose flour
  • 1/2 cup oat flour
  • 2 tbsp honey or sugar
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/8-1/4 tsp cinnamon
  • 1.25 cups of milk or milk substitute at room temperature
  • 1 egg, lightly beaten at room temperature
  • 3 tbsp melted butter or oil of your choice Plus extra for the skillet.
  • 1 cup of frozen or fresh blueberries. If using frozen blueberries, they can be partly frozen. This will increase the cooking time by about 1 minute per side.


  1. Mix dry ingredients well.
  2. Mix in the remaining wet ingredients, minus the blueberries. About 1-1.5 minutes.
  3. If you don't mind the blueberries turning the pancake batter blue, gently fold them in after the other ingredients are mixed well.
  4. Or pour your pancake batter & then add several blueberries to each pancake. Work quickly so your batter doesn't set.
  5. Heat a medium to large skillet on medium-high heat. Adding 1-2 tsp of oil per batch.
  6. Cook for 2-2.5 minutes per side. You'll know when to flip your pancakes when the edges are full of air bubbles.
  7. If they pancakes are browning too quickly, remove from the heat and turn the burner down by 1 or 2 notches.
  8. Pancakes are done when they spring back after being lightly pressed.
  9. Serve hot with fresh fruit, warmed maple syrup (my favourite) or honey.
