I've been eating plantains my entire life. I didn't want to give them up, so years ago I tried cooking them on the grill instead of the traditional methods of frying. I was hooked. Then winter came along, so I popped them in the oven. Just as delicious! There's no need to stop eating your favourite foods. Just modify how you cook/bake them. Watch me make this very simple but delicious dish
3-4 medium ripe plantains
1-2 tbsp cooking oil/coconut oil or omit if using a good nonstick baking sheet
salt & pepper to taste or omit. (Most of the item I do not use any seasoning at all.)
Remove the skin from your plantains. I wash the plantain first.
Cut into even disc shapes or lengthwise.
In a bowl or right on the baking sheet, add oil & seasonings. Toss until coated.
Bake in preheated oven of 350°F/176°C for 20-25 minutes. Turning halfway in between for even browning.
Serve hot or warm, as a side or enjoy on it's own.
This is also amazing on the grill. Just make sure your grill is well oiled so the plantain does not stick.
