Not a lover of chocolate but still love a dense brownie? Try a Blondie. The brown sugar gives this dense cake a nice butterscotch-like flavour that even chocolate, lovers like myself will & do love. Take this to your next potluck or for a delicious weekend treat. Watch me make it here.
1.25 cups all purpose flour
1.5 tsp baking powder
1/8 tsp salt
1/2 cup plus 2 tbsp butter/margarine/vegan substitute
1.5 cups unpacked brown sugar
2 large eggs, lightly beaten
2 tsp vanilla extract
.5 cup chopped nuts of your choice
Preheat oven to 325°F/162°C.
Grease & flour an 8 inch square or round baking pan.
Combine flour & salt. Set aside.
Melt butter & sugar over low heat on stove. About 2-3 minutes, mixing to help the sugar dissolve.
Remove from the heat & let cool for a few minutes. Add the beaten eggs & vanilla.
Blend in dry ingredients, just until flour is incorporated.
You can mix in nuts with the flour or place them on top, like I do in the video.
Spread in prepared pan. Bake for 12-15. Do not over bake or the Blondie will be dry. Cool slightly or completely before cutting & serving. Enjoy!
Test with a wooden toothpick. You want a little crumb (not wet), when the toothpick is inserted & removed. If it's completely dry the Blondie may be over done. Still good but not as moist as it should be.
If you use a smaller pan, you will need to increase the baking time. If you use a larger baking pan you will need to decrease the baking time. 2-5 minutes on either side.
You can use your favourite nuts. Such as cashews, almonds, peanuts etc.
You can also add seeds such as pumpkin or sunflower.
Or to add to the butterscotch flavour add some toffee pieces, toffee chips or white chocolate chips.
