Breakfast Foods

This is one of many versions of biscuits. My mom & sister had/have the better skill but I try. Isn't it weird how the same recipe turns out differently, when made by a different person? Another simple & delicious recipe for new bakers & kids to try out! Get them in the kitchen young! Watch me make it here.

Quick & Easy Homemade Biscuits

Ingredients

  • 3 cups flour, sifted
  • 2.5 tsp sugar
  • 1/2 tsp salt
  • 3/4 cup shortening
  • 4.5 tsp baking powder
  • 3/4 tsp cream of tarter
  • 1 large egg
  • 1 cup milk

Instructions

  1. Pre-heat oven to 425°F/218°C.
  2. Sift all dry ingredients into a bowl.
  3. Then cut in shortening, until mixture resembles course oatmeal. You can use your fingers, 2 forks or a pastry cutter.
  4. Beat in eggs and milk.
  5. Then add to dry ingredients, lightly mixing until mixture holds together. Do not knead or over mix.
  6. I add most but not all of the liquid to the flour mixture, to start. Sometimes I use it all, other times I do not.
  7. Roll out on a lightly floured surface.
  8. About an inch thick.
  9. Bake at 425°F/218°C until golden brown. About 9-11 minutes.
  10. Do not over bake. A dry biscuit is a bad biscuit.

Notes

The linked video shows the 1/2 recipe.

This is one of many versions of a biscuit. Some use eggs, others to not. Some use buttermilk, others do not. Some use water & vinegar, others do not. You get. Use the recipe that you love, or the ingredients that you have on hand.

I've been eating plantains my entire life. I didn't want to give them up, so years ago I tried cooking them on the grill instead of the traditional methods of frying. I was hooked. Then winter came along, so I popped them in the oven. Just as delicious! There's no need to stop eating your favourite foods. Just modify how you cook/bake them. Watch me make this very simple but delicious dish here.

Baked Plantain

Prep Time: 5 minutes

Cook Time: 25 minutes

1/4 to 1/2 a plantain

Baked Plantain

Ingredients

  • 3-4 medium ripe plantains
  • 1-2 tbsp cooking oil/coconut oil or omit if using a good nonstick baking sheet
  • salt & pepper to taste or omit. (Most of the item I do not use any seasoning at all.)

Instructions

  1. Remove the skin from your plantains. I wash the plantain first.
  2. Cut into even disc shapes or lengthwise.
  3. In a bowl or right on the baking sheet, add oil & seasonings. Toss until coated.
  4. Bake in preheated oven of 350°F/176°C for 20-25 minutes. Turning halfway in between for even browning.
  5. Serve hot or warm, as a side or enjoy on it's own.

Notes

This is also amazing on the grill. Just make sure your grill is well oiled so the plantain does not stick.
