Mini Cherry Meringues ~ Valentine's Day 2018


  • 2 egg whites at room temperature
  • 3 tbsp cane sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • 1/4 cup cherry puree, drained of excess liquid
  • 1 cup of chopped or sliced fruit of your choice
  • 1 cup whipped cream


  1. Turn oven to 150°F/ 65°C.
  2. Prepare 2 baking sheets with a silicone sheet or parchment paper.
  3. Separate egg whites & whisk for 2 minutes, until soft peaks start to form.
  4. Add sugar & cream of tartar. Whisk another 5 minutes or until stiff peaks form & egg whites are glossy. Check that sugar is dissolved by rubbing a drop between your fingertips. You should not feel any sugar granules.
  5. Test: When you turn the bowl upside down the meringue should not fall or slide down the bowl.
  6. Gently fold in the vanilla extract & cherry puree.
  7. Use a piping bag or a spoon to create shapes that you like on prepared baking sheet. Make sure the thickness of each meringue is the same so they are consistent in texture.
  8. Bake 1 hour at 150°F/ 65°C.
  9. Turn off oven and let cool completely inside of the oven.
  10. Decorate with whipped cream & fruit. Serve immediately.
  11. Plain meringue can be sealed in airtight container for 1 to 2 days, or frozen for up to 1 month. Any moisture will soften meringue.
