Guyanese Soft Bakes are a childhood favourite of mine that I still occasionally enjoy today. Crispy edges, with a soft chewy interior. They are simple to make & easy to enjoy. Eat them with breakfast, to replace your bread. Or enjoy them dipped in maple syrup, the way that I used to growing up & still do today. Guyanese Soft Bakes


  • 1 cup plus 2 tbsp all-purpose flour
  • 1 tbsp sugar
  • pinch of salt
  • 1-2 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup hot water
  • 1-2 tsp margarine or butter


  1. Mix the milk & hot water together, plus the margarine/butter. Let margarine melt.
  2. Add the dry ingredients to a bowl, mixing well.
  3. Add the vanilla to the milk mixture. Stir.
  4. Add milk mixture to the flour mixture. Mixing by hand until there are no lumps.
  5. Set aside, covered, on the counter, for 1-3 hours.
  6. Heat a skillet with 1/4 to 1/2 inch of vegetable oil, to medium-high heat.
  7. Gently drop by heaping tbsp, into the skillet. Cooking for 1.5 to 2 minutes per side or until bakes are a golden brown.
  8. Drain on a paper towel.
  9. Serve hot or at room temperature. Enjoy by themselves or with breakfast as a bread replacement.
