These cookies are quick and easy. Whip them up ahead of time or at the last minute.
1 oz softened butter
2 oz organic cane sugar
1/2 large egg, lightly beaten
2.5 oz. all-purpose flour
1.25 oz unsweetened coconut flakes
1 tsp grated lemon rind
Pre-heat oven to 325°F
You'll need one large baking sheet, lightly greased, non-stick or lined with parchment paper.
Beat butter and sugar together, until creamy and light. About 5 minutes.
Then add 1/2 egg.
Beat until mixed.
Add flour, lemon rind and all the coconut but 1 tbsp.
Mix well but do not over mix.
Make 12 loose balls. Mixture will be sticky, but stiff.
Dip each top in coconut.
Place on tray. Coconut dipped side, up.
Bake for 14 minutes, or until lightly browned.
You can substitute, lime or orange rind, for the lemon rind. Or leave it out completely if citrus isn't your thing.
You can also add dried fruits, chocolate or nuts, chopped small. About 1/4-1/2 cup at the most.
You can substitute the all-purpose flour with gluten free, all-purpose flour. Using the same amount.
