Healthy Sweet Potato Bread

Prep Time: 10 minutes

1 long, large loaf or 2 smaller loaves or 12 buns

Healthy Sweet Potato Bread

Ingredients

  • 1/2 cup sweet potato mash
  • 2.5 tsp traditional yeast
  • 6 -7 oz water water
  • 1 large egg beaten or flax seed gel. Check the link provided for how to make this.
  • 1 tbsp honey or sugar
  • 1/2 tsp salt
  • 2 tbsp melted coconut oil or melted butter/olive oil/any oil for baking that you prefer
  • 8 oz all-purpose flour
  • 8 oz oat flour
  • 1 tsp brewer's yeast (optional)
  • 3 tbsp ground flax seed

Instructions

  1. Add the yeast & honey to 2/3 of the warm water. Mix and set aside. The yeast needs to start bubbling before it is added to the rest of the ingredients.
  2. Mix flours, brewer's yeast, flax seed & salt. Set aside in a large bowl.
  3. Mix the sweet potato mash, melted coconut oil & egg together set aside.
  4. When the yeast has started to bubble to the top of the water add the sweet potato mash mixture to the flour. Then add the yeast mixture.
  5. Using a wooden spoon or your clean hand, mix until the dough starts to form and hold together. You want it to be slightly sticky. If the dough is too dry before this point add the other 1/3 of the warm water.
  6. You can continue to mix in the large bowl or turn the dough onto a lightly floured surface. Kneading for about 6-10 minutes.
  7. Place the dough in a lightly greased bowl. Let rise in a warm spot, covered, until double in size. About 30-40 minutes.
  8. Shape the dough and place in prepared baking pans. Preheat oven to 350°F/176°.
  9. Let rise, covered, for another 35-ish minutes.
  10. Bake for 30-35 minutes or until done.
  11. You can baste the tops, with butter straight out of the oven. I chose not to.
  12. Leave in pan for 10 minutes. Turn out onto wire rack to cool completely or serve warm.

Notes

The amount of liquid and flour will depend on a few factors.

-Your altitude

-The weather

-The type of flour you use

-How much moisture is in the sweet potato mash

If your climate is dryer, you may need more liquid. If your climate is humid you may need more flour.

Always have extra flour and warm water on hand, when you begin mixing. Don't add all of the liquid at one. Start with about 2/3rds of the water and go from there.

This bread freezes very well for up to 6 months. Cool completely, slice & wrap well before freezing.

Healthier Sweet Potato Bread

Ingredients

  • 7 oz fresh sweet potato puree
  • 16 oz unbleached all purpose flour
  • *3.139 oz oatmeal flakes
  • 3 tbsp ground golden flax seed
  • 3 tbsp psyllium husk
  • 3 tbsp toasted and ground pumpkin seeds
  • 1 oz melted coconut oil
  • 1 oz **liquid honey or sugar
  • 1 egg
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 2.5 tsp instant yeast or 2 tsp traditional yeast
  • 3.5 fl oz of warm water to dissolve yeast and sugar or honey

Instructions

  1. Mix all of the dry ingredients together in a large bowl.
  2. Then add wet ingredients. Mix together and knead about 5-10 minutes, until dough is smooth and elastic.
  3. Put in a greased, large bowl, covered. Let rise until doubled, in a warm place, for about 1 hour.
  4. Punch down lightly, shape and put in greased baking dish. Let rise about 1/2 hour.
  5. Bake in pre-heated oven at 350°F for about 35 minutes, or until bread is browned, starting to pull away from sides of pan, or when it sounds hollow when rapped with knuckles. Oven times and temperatures will vary. Keep on eye on the bread!
  6. Leave in pan for 5-ish minutes, then let cool completely on cooling rack. Or enjoy bread warm!

Notes

* I used 3 individual packets of oatmeal, because I thought it was a little too finely milled, to eat as cereal. Again use what you have, don't run out to the store if it's not necessary.

** I used liquid honey for more health benefits.
