This is what we had in our household last night. One was just the sauce and pasta, (put aside before the turkey was added) for the vegetarian. My tomato sauce was quicker than I prefer it, but it tasted pretty good. I prefer my sauces to simmer all day. I had some fresh tomatoes that needed to be used, along with a can of San Marzano tomatoes. I prefer these kind of tomatoes because they tend to be less acidic therefore you don't have to fiddle with adding some kind of sugar to balance out the acid. A little more expensive than the other varieties of canned tomatoes, but I think it's worth it.
Homemade tomato sauce with turkey meatballs. A change from the regular beef meatballs and of course less cholesterol and fat. The only thing with ground turkey or chicken is the consistency is much softer. So after I mixed and rolled the balls I put them in the fridge for about an hour, before adding them to the sauce. They didn't fall apart like they have a tendency to do sometimes.
Tomato sauce with turkey meatballs over spinach rice vermicelli. I used the rice vermicelli for the gluten free person in the household. I've tried a lot of other gluten free products and some of them are still pretty bad. One of the brands I do like is San Zenone corn pasta by Prairie Harvest.
Tomato sauce with chicken breast over whole grain linguine. I had a leftover chicken breast so I decided to heat it up in the sauce. A nice grating of parmigiana reggiano, to top it off. So good.
