Oven Roasted Sweet Potato (White Flesh Variety)
1 large yellow flesh sweet potato, washed & peeled or not
1-2 tbsp of grapeseed/coconut/vegetable oil
1/2 tsp onion granules/powder
1/2 tsp garlic powder
1 tsp turmeric
1/4 tsp dried thyme
1/4 tsp dried oregano
salt & pepper to taste
Pre-heat the oven to 425°F/220°C.
Spread oil on a prepared baking sheet & set it aside.
Cut your sweet potato into equal pieces. About 1.5 inches.
In a bowl or on the same baking sheet, add all of the spices & mix, making sure that the sweet potato pieces are covered well.
Bake for about 35 minutes, or until tender and browned. Times may vary by your oven.
Halfway through the baking flip the sweet potato pieces.
If the sweet potatoes are browned before they are tender, cover the baking tray with a piece of foil or parchment paper, until they are done.
Serve hot or warm.
If you refrigerate the cooked sweet potatoes reheat them in the oven for best results.
Preheat the oven to 350°F/177°C and heat for 10-12 minutes.

This is my go to recipe for gaucamole. I'm not a fan out super smooth or mashed gaucamole, but if that's what you prefer, mash away! I do add ground cumin because that's the first way I learned to make it, years ago. Leave out what you want but try it, I'm sure you'll love it!

4 ripe avocados
1/4 cup chopped tomatoes
1/4 cup finely chopped onions
1 tbsp chopped chives
2 large garlic cloves, crushed or finely minced
1/2 tsp ground cumin
1/4 tsp crushed red chili flakes
1/4 tsp salt
heaping tsp of dried cilantro
black pepper, to taste
Measure out all of the herbs and spices. Set aside.
Chop all of the vegetables, except avocado. Set aside.
Cut the lime in half.
In a medium sized bowl, remove the avocado from the skin & place in bowl.
Save the avocado pits.
Mash the avocado to your desired consistency.
Add half of the lime to the bowl.
Add all the other ingredients, except a sprinkling of chives. Mix together.
Adjust seasonings. Add the rest of the lime if you feel that it needs it.
Add back the pits.
Cover with plastic wrap and refrigerate.
Or serve right away, with chips, crackers or vegetables.
This is my take on guacamole.
You adapt it to your tastes or make it in the traditional way.
