Chickpea & Potato Patties

Chickpea & Potato Patties


  • 2 cups cooked chickpeas or 1 can rinsed & drained
  • 1 large russet potato, grated
  • 1/4 cup flax seed gel
  • 1 small onion, diced
  • 2-3 garlic cloves, minced
  • 1 tsp dried herbs (oregano, basil, thyme etc. )
  • .5 - 1 tsp salt
  • .5 -1 tsp chili or black pepper
  • 2-4 tbsp cooking oil for skillet


  1. Mix salt, herbs & pepper. Set aside.
  2. Saute onions & garlic with 1/2 of the spice mixture. About 5 minutes until soft & lightly browned. Cool slightly. You can use 1 tsp of vegetable oil to saute or not.
  3. Mash chickpeas in a bowl with a potato masher or fork. Or in a food processor. You still want rough bits of chickpea.
  4. Add slightly cooled onion mixture & flax seed gel. Mix well.
  5. Grate potatoes, squeezing out excess water. Add to chickpea mixture, along with remaining spice mix well.
  6. Form into 12 patties. About 1/4 inch thick. You can form the patties, cover & refrigerate for up to 2 days.
  7. Heat a large skillet on medium-high heat. Add .5-1 tbsp of vegetable oil per batch, if needed.
  8. Do not overcrowd skillet, cooking about 3.5 minutes per side, on medium-high heat.
  9. Enjoy & serve hot!


If your mixture is too wet, you can add 1-2 tbsp of all-purpose/chickpea flour. You can replace the flax seed gel with 1 large egg.
